Easiest Way to Prepare Yummy Ayam Betutu (Chicken in Balinese spices)

Ayam Betutu (Chicken in Balinese spices). Betutu is the Balinese term for using a whole chicken marinated in rich aromatic spices and herbs and then steamed and/or grill. Ayam betutu is made super spicy in Gilimanung and in Klungkung, the betutu is stuffed with spices and veggies like cassava leaves or kale. Betutu is an Indonesian-Balinese dish of steamed or roasted chicken or duck in rich bumbu betutu (betutu spice mix).

  13. It's of Roughly chopped spices.
  14. Prepare 2 pcs of lemongrass.
  15. You need 5 of bay leaves.
  16. You need 3 of lime leaves.
  17. It's 3 of shallots.
  18. Prepare of Additional.
  19. Prepare of Banana leaves for cover.
  20. You need of Aluminium foil.

Season with salt and stir well. Another spices recipes from Bali, Gods Island. This recipe was modified from my cookbook that I brought from Indonesia, Hidangan Ayam ala Resto by Sufi S. In that cookbook, I saw a recipe Bebek Betutu which Bebek means duck in bahasa Indonesia.

Ayam Betutu (Chicken in Balinese spices) instructions

  1. Blend all the blended spices.
  2. Heat a pan, sauteƩ the blended spice until fragrant. Afterwards, bring the roughly chopped spices in until it's cooked..
  3. Rinse the chicken well, place it on the banana leaves, then rub it with the cooked spices. Wrap in the leaves and let it cool in the fridge for minimum an hour (better overnight)..
  4. Next, wrap the banana leaves with aluminium foil and steam the chicken until it's tender (mine roughly 1 hour)..

I modified by using chicken instead. Ayam betutu is one of my all-time favourite dishes. Place the chicken into the bowl, and then mix well with ¾ of the spice paste and add the bay leaves.
